FISH SOUP

FISH SOUP

Autor ANEGATRAC (Recipe original from south of Spain)


Ingredients
  • 300   Grs. Special fish to make soup (In Spanish: Morralla)
  • 1       Dried pepper (In Spanish: Ñora)
  • 1       Tomato
  • 1       Onion
  • 6       Clams per person aprox.
  • Paprika
  • Parsley
  • Salt
  • Olive oil
  • Vermicelli for soup (fine)
  • Lemon

INSTRUCTIONS:

Firstly, the dried pepper is cut and the seeds are taken out. Secondly, the dried pepper is fried in a pan with olive oil, on a low flame, moving it constantly to avoid burning it. The fried dried pepper is squashed in a mortar.

The tomato is grated and then, it is fried in the same oil that we have fried the dried pepper. We have to move it until to get a tomato sauce.

The onion is peeled and chopped.

When the water in the pot is boiling, we put the onion, the dried pepper, the tomato sauce into the pot. Few minutes later, we add the fish, paprika, parsley and a pinch of salt. All the mix keeps on boiling during one hour.

After that, we will taste it to correct the point of salt. Then, the mix is drained in the colander.

In the end, when the broth is boiling we put the clams and the vermicelli into the pot. Ten minutes later, it is tasted to check the vermicelli's are cooked.

It is served with lemon drops.
